Mung Bean Sweet Potato Patties
Ingredients
- 3 medium sweet potatoes
- 2 cups cooked mung beans
- 1 small onion, finely diced
- 1 serrano pepper, finely diced
- 1 tablespoon grated ginger
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 2 teaspoons garam masala
- 2 tablespoons neutral oil
- Handful of chopped cilantro
- 4 tablespoons chickpea flour
- Salt to taste
Preparation
Peel 3 medium sweet potatoes and cut them into approximately 1/2-inch pieces. Boil and mash them.
In a large bowl, mix the mashed sweet potato with the other ingredients until well combined.
Form the mixture into patties.
Pan fry or bake the patties on a parchment-lined baking sheet at 400°F until golden brown, about 20-25 minutes, flipping halfway through.
Serve with avocado and homemade spicy ketchup or on a burger bun with vegetables of choice.
