Mung Bean Sweet Potato Patties

Ingredients

  • 3 medium sweet potatoes
  • 2 cups cooked mung beans
  • 1 small onion, finely diced
  • 1 serrano pepper, finely diced
  • 1 tablespoon grated ginger
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 2 teaspoons garam masala
  • 2 tablespoons neutral oil
  • Handful of chopped cilantro
  • 4 tablespoons chickpea flour
  • Salt to taste

Preparation

  1. Peel 3 medium sweet potatoes and cut them into approximately 1/2-inch pieces. Boil and mash them.

  2. In a large bowl, mix the mashed sweet potato with the other ingredients until well combined.

  3. Form the mixture into patties.

  4. Pan fry or bake the patties on a parchment-lined baking sheet at 400°F until golden brown, about 20-25 minutes, flipping halfway through.

  5. Serve with avocado and homemade spicy ketchup or on a burger bun with vegetables of choice.
