Simple Garlicky Mushroom Avocado Toast

Ingredients

  • 2 slices sourdough bread
  • a large handful brown mushrooms
  • 1 tbsp olive oil
  • 1 clove garlic
  • 1 avocado
  • 1 squeeze lemon juice
  • small handful fresh basil
  • salt and pepper

Preparation

  1. Slice mushrooms to desired thickness and gently fry in olive oil over medium heat until golden brown

  2. While mushrooms fry, toast the bread and mash the avocado with lemon juice in a bowl

  3. About one minute before mushrooms are done, add chopped garlic to the pan

  4. Season mushrooms with salt and pepper

  5. Spread avocado mash on toast and top with mushrooms and fresh basil
