Vegan Red Thai Curry

Ingredients

  • Loaded with veggies, fresh basil leaves and home made coconut milk, it is full of delicious flavors. Sharing my quick recipe here, if you wish to give it a try ? ?Preparation ? I made coconut milk from scratch for this. Milk from 1 medium size coconut was good for the curry. You can use the ready made one available in the market. The approximate quantity was 500 ml
  • Wash and chop veggies of your choice. I used onion shallots, carrots, baby corn, Bell Peppers, corns, broccoli. ? Fresh Basil leaves totally enhance the flavors so use it generously
  • Red Thai curry paste - I used the ready made one from @realthaiofficial. Use the quantity as per your taste
  • Process-
  • Heat oil in a wok and add all the veggies. Cook them at a high flame, when they are crunchy , take them out
  • In the same pan, add Thai curry paste and coconut milk. Cook it for a while till both the flavors blend properly. Add salt as per taste and basil leaves . Now add all the vegetables and simmer it for 10 min. You can add more Thai curry paste at this time too if you feel. Squeeze fresh lemon juice before serving
