Chickpea and Spinach Pizza
Ingredients
Crust
- 1 batch of gluten-free pizza crust (or crust of choice)
Sauce
- 2 tbsp olive oil or any other oil (divided)
- 1/2 cup tomato sauce
- 4 tbsp coconut milk canned (or any other plant-based milk)
- 1 tbsp balsamic vinegar (or apple cider vinegar)
- 1 tbsp hot sauce (or more/less to taste)
- 1 tsp coconut sugar (or regular sugar)
- spice mix (1 tsp each of smoked paprika, onion powder, garlic powder)
- sea salt and pepper to taste
Toppings
- 1 batch of vegan cheese sauce
- 1 avocado
- 15oz can chickpeas
Preparation
Prepare the pizza crust according to the batch instructions
Make the sauce by combining all sauce ingredients in a bowl and mixing well
Prepare the vegan cheese sauce following its recipe
Assemble the pizza by spreading the sauce over the crust, then adding chickpeas, sliced avocado, and the vegan cheese sauce; include spinach if not part of the cheese sauce
Bake the pizza in a preheated oven at around 200°C for 10-15 minutes or until the crust is golden and toppings are heated through
