Vegan Truffle Edamame Dumplings
Ingredients
- 1.5 cup edamame beans
- 2 cloves garlic
- 1 tsp lemon juice
- 1 tbsp olive oil
- 3 tsp soy sauce
- 4 tbsp water
- 0.5 tsp black pepper
- 4 tsp truffle oil (strong)
- 1 tsp minced ginger
- 1 pack dumpling wrappers
Preparation
Cook the edamame in a pot of boiling water for 3-4 minutes.
Strain and transfer the edamame to a food processor. Add the garlic, lemon juice, olive oil, soy sauce, water, black pepper, truffle oil and minced ginger. Blend until smooth.
Taste and adjust with more truffle oil if necessary.
Assemble the dumplings: prepare a small bowl of water, your wrappers, and stuffing.
Take one dumpling wrapper. Dip the tip of your index finger in the water and rub it along all 4 sides of the dumpling wrapper.
Take a small spoon of your stuffing and place it in the middle of the wrapper.
Fold up sides to form a pyramid-shaped pouch. Pinch edges together to enclose.
To cook the dumplings place them in boiling water and boil for 4-8 minutes or until the wrapper is nice and soft.
Top with your preferred toppings. I used sesame seeds, scallions and chili oil.
