Creamy Spicy Soup with Sweet Potato and Pear
Ingredients
- 1 sweet potato
- 1 onion or leek
- 1 tablespoon tomato paste
- 3 garlic cloves
- 2 pears
- 1 ginger root
- 200 ml heavy cream (20% fat)
- 1 teaspoon paprika
- 1 teaspoon curry powder
- 1 cup water or broth
- vegetable oil for frying
- ciabatta for croutons
- a few sprigs of parsley for garnish
Preparation
Cut the sweet potato, onion, and pears into large pieces and sauté in a pot for 7-8 minutes, stirring occasionally.
Add garlic, ginger, tomato paste, salt, pepper, curry powder, and paprika; stir and cook until fragrant.
Pour in the broth, cover, bring to a boil, then add the cream.
Simmer until the sweet potato is very soft, about 20 minutes, then turn off the heat and let the soup cool.
Blend the soup with a blender until smooth.
Serve with croutons (fry ciabatta in oil until golden brown), sprinkled with chopped parsley, and optionally add a pinch of dried chili flakes for extra spice.
