Cheesy Mashed Potatoes

Ingredients

  • 5-6 Yukon potatoes
  • 1/4 cup nutritional yeast
  • 1 cup almond milk, unsweetened
  • 3 tbsp Earth Balance butter
  • 3 garlic cloves, minced
  • salt and pepper to taste

Preparation

  1. Boil a large pot of water, add potatoes and simmer for about 20 minutes

  2. You can also dice potatoes into smaller pieces to cook faster

  3. After potatoes are soft, drain water, let them cool off, peel off the skin and mash

  4. Put the same pot on medium heat and add butter and garlic, cook for 2 minutes

  5. Add almond milk and nutritional yeast and mix well

  6. Add mashed potatoes, salt, pepper and mix well

  7. Add more or less almond milk depending on the texture you prefer
