Creamy Sun Dried Tomato Pasta

Ingredients

  • 12 ounces of pasta
  • 2 tablespoons dairy-free butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups dairy-free milk
  • 2/3 cup sun dried tomatoes
  • 1.5 cups packed spinach (optional)
  • 1 tablespoon garlic powder
  • 2 tablespoons nutritional yeast
  • 1 tablespoon tomato sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon crushed red pepper

Preparation

  1. Cook pasta according to package instructions, then drain and set aside.

  2. Heat a medium pot or Dutch oven on low heat and add the butter.

  3. Once the butter is melted, add the flour and whisk until it forms a clumpy paste.

  4. Slowly add the milk and whisk until all clumps are smoothed out.

  5. Increase the heat to medium-low and cook for 3-4 minutes, whisking continuously to prevent burning. Avoid letting it boil.

  6. Add the salt, pepper, tomato sauce, nutritional yeast, and garlic powder, and mix well.

  7. In a large bowl, combine the cooked pasta, sun dried tomatoes, fresh spinach (optional), and the sauce.

  8. The warmth from the pasta and sauce will cook the spinach slightly. Sprinkle with crushed red pepper and enjoy.
