Nani's Indian Tomato Soup

Ingredients

  • 12 round tomatoes, blended
  • 2 green chillies, cut length ways through the middle
  • 1.25 tsp mustard seeds
  • 1 tsp crushed cumin seeds
  • 1/2 tsp black pepper
  • 8-10 cloves of garlic, blended
  • 2 inch ginger, blended
  • 1.25 tsp salt
  • 1 tsp sugar
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • Handful of chopped coriander
  • 1 tbsp chickpea flour
  • 1 tbsp oil
  • 1/4 cup water

Preparation

  1. In a saucepan heat your oil, then add in your mustard seeds and let them pop.

  2. Next add in your chickpea flour, let this sizzle and then add in your ginger and garlic.

  3. Add in your blended tomatoes and the remaining ingredients.

  4. Add in 1/4 cup of water.

  5. Let this simmer on a low heat and enjoy with a small dollop of butter, some yummy bread rolls or you can even dunk your rotlis in it.

  1. This is a quick soup packed with vitamins and warmth, perfect for cold weather.
