Quick Bangladeshi Phona Mas Curry

Ingredients

  • 1 small onion grated
  • 1 clove of garlic grated
  • 1 packet of cleaned Phona Mas
  • 1 tsp chilli powder
  • 3/4 tsp of turmeric powder
  • 1/2 tsp coriander powder
  • 3/4 tsp salt (or to your taste)
  • 2 - 3 sliced green chillies
  • 3 - 4 tsp oil
  • water as desired
  • coriander for garnishing

Preparation

  1. In a saucepan add your small grated onion, 1 clove of grated garlic, 1 tsp chilli powder, 3/4 tsp turmeric powder and 1/2 tsp coriander powder.

  2. Add the cleaned Phona Mas (make sure you wash the fish with salt water to get rid of any foul smells/dirt).

  3. Add 3/4 tsp salt or to your taste.

  4. Add sliced green chillies.

  5. Add 3 - 4 tsp of oil, more if you like.

  6. Gently mix by hand to coat all the fish with the spices and onion.

  7. Cover the saucepan and simmer over a low heat for 7 - 10 minutes.

  8. Once the fish have turned opaque in colour and released water you can add a splash of water to loosen the curry and boil for a further five minutes.

  9. Garnish with fresh/frozen coriander and promptly remove from the heat.
