Quick Bangladeshi Phona Mas Curry
Ingredients
- 1 small onion grated
- 1 clove of garlic grated
- 1 packet of cleaned Phona Mas
- 1 tsp chilli powder
- 3/4 tsp of turmeric powder
- 1/2 tsp coriander powder
- 3/4 tsp salt (or to your taste)
- 2 - 3 sliced green chillies
- 3 - 4 tsp oil
- water as desired
- coriander for garnishing
Preparation
In a saucepan add your small grated onion, 1 clove of grated garlic, 1 tsp chilli powder, 3/4 tsp turmeric powder and 1/2 tsp coriander powder.
Add the cleaned Phona Mas (make sure you wash the fish with salt water to get rid of any foul smells/dirt).
Add 3/4 tsp salt or to your taste.
Add sliced green chillies.
Add 3 - 4 tsp of oil, more if you like.
Gently mix by hand to coat all the fish with the spices and onion.
Cover the saucepan and simmer over a low heat for 7 - 10 minutes.
Once the fish have turned opaque in colour and released water you can add a splash of water to loosen the curry and boil for a further five minutes.
Garnish with fresh/frozen coriander and promptly remove from the heat.
