Raw Vegan No Tuna Salad

Ingredients

  • 2 cups almonds or cashews
  • 1/2 cup onion
  • 1 1/2 cups celery
  • 1/2 cup parsley
  • 1/4 cup shallot or scallion
  • 1/4 cup lemon juice
  • 2 teaspoons kelp powder and/or dulse
  • 2-3 sheets of dried seaweed
  • sea salt to taste

Preparation

  1. Soak almonds 8-12 hours, drain, rinse and drain again.

  2. Place almonds and onions through the heavy-duty juicer or blend and drain liquid out.

  3. Place mixture in a large bowl, add celery, parsley, shallots, lemon juice, kelp, dulse or sea salt and stir thoroughly.
