Simple Roasted Vegetable and Salmon Pasta
Ingredients
- 3 red peppers
- Olive oil
- 3-4 frozen salmon fillets
- Broccoli florets (fresh or frozen)
- Pasta
- 2 tablespoons pesto
- 2 large handfuls of green leaves (such as spinach, chard, or watercress)
- Grated cheese
Preparation
Chop up the red peppers, drizzle with oil, and place in the oven at 180°C fan or 200°C.
After 10 minutes, add the frozen salmon fillets and bake for another 10 minutes.
Stir the mixture, add broccoli florets and a little more olive oil, then bake for 15 minutes.
Meanwhile, cook the pasta.
Remove the baking tray from the oven and stir through 2 tablespoons of pesto and 2 large handfuls of green leaves; these will wilt in the heat.
Drain the pasta, mix everything together in the baking tray, and serve with grated cheese.
