Spicy Chorizo Stuffed Peppers Dinner
Ingredients
- 1 bell pepper
- 1 onion
- 1 jalapeño
- 2 garlic cloves
- 18 oz chorizo
- bell pepper halves
- avocado
- cilantro
Preparation
Dice or shred 1 bell pepper, 1 onion, 1 jalapeño and 2 garlic cloves. Heat in a large skillet over medium-high heat.
Add 18 oz chorizo (either the soft kind or the hard kind, diced). Cook the chorizo with the veggies until all is soft and cooked through.
Transfer into bell pepper halves, either raw or roasted until soft. Top with more jalapeños, avocado and cilantro if desired.
