Spinach and Tomato Lentil Dhal

Ingredients

  • 1 cup red lentils
  • 2 handfuls fresh spinach or 2 cubes frozen
  • 2 handfuls cherry tomatoes
  • 1 stock cube
  • 1 tbsp curry powder

Preparation

  1. Add all ingredients to a saucepan along with 2 cups of cold water.

  2. Simmer on a low heat for 20 minutes, stirring occasionally to stop it from sticking.

  3. If it starts to dry out, add a little extra cold water.

  4. Turn the heat off for a couple of minutes and allow it to thicken up.

  5. Finally, spoon into bowls and serve.

Tips

  1. Add a wedge of lemon, some fresh herbs, and chili flakes for extra flavor. Serve with crusty bread.
