Sweet Potato and Veggie Fajitas

Ingredients

  • 1 medium sweet potato
  • 2 medium carrots
  • 2 peppers
  • 2 tsp paprika
  • 1 tsp each turmeric, ginger, cumin and coriander
  • 2 tsp mixed dried herbs
  • Olive oil
  • 1 tin chopped tomatoes
  • 1 tbsp tomato purée
  • 2 cloves garlic

Preparation

  1. Pre-heat the oven to 200C/180 fan.

  2. Peel the sweet potato and carrots, chop along with the peppers into bite-size chunks.

  3. Place onto a baking tray and mix all the spices and herbs into the vegetables.

  4. Drizzle with olive oil and place into the oven for 30 minutes. Stir halfway through cooking.

  5. Once the veg has softened in the oven, place into a saucepan along with the chopped tomatoes, tomato purée, garlic and allow to simmer.

  6. You could add in a tin of mixed beans at this stage too.

Serving suggestions

  1. Serve with wraps, homemade guacamole, grated cheese, salad and any other toppings that you enjoy.
