Vegan-Lentil-Chili Sin Carne

Ingredients

  • 2 tablespoons of olive oil ?3 cloves of garlic (chopped) ?1 large red onion (chopped) ?2 carrots (peeled and cut) ?2 red peppers (sliced) ?1 tsp cumin ?1 tsp chili powder ?2 cans of pizza tomatoes ?1 can kidney beans (drained) ?150g red lentils ?1/2 can chickpeas ?1 cup pineapple ?1 can of corn (with liquid) ?300ml water ?2 tbsp balsamic vinegar ?salt and pepper

Preparation

  1. Heat up some olive oil in a big pot and saute the onions, garlic, carrots and paprika for around 4-6 minutes on medium heat until the vegetables are well-done

  2. Mix in cumin, the ground chili, some salt and pepper and subsequently add the tomatoes, kidney #beans , lentils, #chickpeas ,corn ,pineapple and water

  3. Let the chili cook for 25 minutes, stir regularly

  4. Serve the chili with cooked rice and decorate as seen on the picture?
