Vegan Bbq Cauliflower Tacos with Cashew Cheese

Ingredients

Cauliflower sauce

  • 2 medium cauliflowers, or 1 large cauliflower
  • 3 tbsp miso paste
  • 2 tbsp ketchup-style sauce
  • 1 cup water
  • 1 tbsp taco mix spice
  • 4 tbsp maple syrup
  • 1/3 cup lemon juice
  • 2 tbsp olive oil

Cheese sauce

  • 1/2 cup cashews
  • 1/4 cup water
  • 3 tbsp nutritional yeast
  • 1 tsp lemon juice
  • a pinch of salt
  • a pinch of pepper
  • chopped chives

Tacos and toppings

  • 100g lettuce leaves
  • 8 taco shells
  • 1 avocado, sliced
  • chopped red and orange sweet mini peppers
  • chopped red onion
  • chopped chives

Preparation

  1. Chop the cauliflower and clean it well

  2. Pour the cauliflower sauce ingredients into a food processor and blend until smooth

  3. Place the cauliflower on a baking tray

  4. Pour the sauce over the cauliflower and stir to coat

  5. Bake at 200°C/400°F for 30 minutes

  6. Blend all the cheese sauce ingredients until smooth

  7. Adjust salt and pepper to taste

  8. Stir in chopped chives

  9. Warm the taco shells

  10. Place lettuce leaves in each taco shell

  11. Add about 3 tablespoons of BBQ cauliflower to each taco

  12. Top with red onion, avocado, and 1 tablespoon of vegan cheese sauce

  13. Garnish with chives and sweet peppers

Tips

  1. Cook the cauliflower slowly to ensure it absorbs the sauce flavors and has a soft, non-crunchy texture
