Vegan Potato Bake with Creamy Sauce

Ingredients

  • 1/2 onion
  • 1 clove garlic
  • 2 tablespoons vegan butter
  • 1.5 cups plant milk (any variety)
  • 1 cup vegetable broth
  • 2 tablespoons flour
  • 700g potatoes
  • Salt and pepper, to taste
  • Fresh thyme, for garnish

Preparation

  1. Preheat the oven to 200°C (400°F)

  2. Finely wash and thinly slice the potatoes

  3. Chop the onion and garlic

  4. Mix the vegetable broth and plant milk together in a bowl

  5. Add one tablespoon of vegan butter to a saucepan and sauté the onion and garlic over medium heat

  6. Stir in the flour

  7. Slowly pour in the vegetable broth and milk mixture, stirring constantly

  8. Simmer over low-medium heat until the sauce is creamy and thick

  9. Grease a baking dish with one tablespoon of vegan butter

  10. Place the sliced potatoes in the baking dish

  11. Pour the creamy sauce over the potatoes

  12. Bake for 1 hour and 10 minutes until the potatoes turn golden

  13. Let cool before serving

  14. Garnish with fresh thyme, salt and pepper
