Vegan Potato Bake with Creamy Sauce
Ingredients
- 1/2 onion
- 1 clove garlic
- 2 tablespoons vegan butter
- 1.5 cups plant milk (any variety)
- 1 cup vegetable broth
- 2 tablespoons flour
- 700g potatoes
- Salt and pepper, to taste
- Fresh thyme, for garnish
Preparation
Preheat the oven to 200°C (400°F)
Finely wash and thinly slice the potatoes
Chop the onion and garlic
Mix the vegetable broth and plant milk together in a bowl
Add one tablespoon of vegan butter to a saucepan and sauté the onion and garlic over medium heat
Stir in the flour
Slowly pour in the vegetable broth and milk mixture, stirring constantly
Simmer over low-medium heat until the sauce is creamy and thick
Grease a baking dish with one tablespoon of vegan butter
Place the sliced potatoes in the baking dish
Pour the creamy sauce over the potatoes
Bake for 1 hour and 10 minutes until the potatoes turn golden
Let cool before serving
Garnish with fresh thyme, salt and pepper
