Chickpea and Sweet Potato Stew
Ingredients
- 1 onion
- 2 small sweet potatoes
- 2 cans of chickpeas (380g)
- 1 can of coconut milk (400ml)
- 1 can of tomato sauce with basil (390g)
- 1 big handful of kale
- 1 tbsp mango chutney
- 1 tsp curry powder
- 1 tbsp garam masala
- 1/2 tsp salt
- 1/2 tsp black pepper
Preparation
Start chopping the onion and the sweet potatoes into cubes. Add to a pot with some oil and stir.
After a few minutes, add the chickpeas and chopped kale.
Add all the liquids and spices into the pot.
Stir everything and put on a lid.
Let the stew boil until the sweet potatoes are soft.
Serve with rice!
