Chickpea and Sweet Potato Stew

Ingredients

  • 1 onion
  • 2 small sweet potatoes
  • 2 cans of chickpeas (380g)
  • 1 can of coconut milk (400ml)
  • 1 can of tomato sauce with basil (390g)
  • 1 big handful of kale
  • 1 tbsp mango chutney
  • 1 tsp curry powder
  • 1 tbsp garam masala
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Preparation

  1. Start chopping the onion and the sweet potatoes into cubes. Add to a pot with some oil and stir.

  2. After a few minutes, add the chickpeas and chopped kale.

  3. Add all the liquids and spices into the pot.

  4. Stir everything and put on a lid.

  5. Let the stew boil until the sweet potatoes are soft.

  6. Serve with rice!
