Hot Honey Peach and Burrata Gnocchi
Ingredients
- 400g fresh uncooked gnocchi
- Olive oil
- Salt and black pepper
- Mixed herbs
Peaches
- 4 peaches
- Olive oil
- Salt and black pepper
- 2 tsp chopped red chillies
- Honey
- 20g butter
Dressing
- Large handful basil
- Few sprigs of mint
- Salt
- 1 tsp garlic
- Olive oil
- Juice of 1 lemon
Cheese
- Burrata
Preparation
Add gnocchi to a roasting tray, cover with olive oil, salt, pepper, and mixed herbs. Bake in the oven for 25-30 minutes at 200°C, turning regularly.
Cut the stones out of the peaches and slice them. Add to a dish, cover with olive oil, red chillies, honey, and butter. Roast in the same oven for 20 minutes, until softened.
Blitz together all the dressing ingredients.
Plate up the crispy gnocchi, peaches, burrata, and dressing, and top with the hot honey sauce from the peaches.
