Tasty Leftovers Omelette for Breakfast or Lunch

Ingredients

  • 1/2 an onion
  • 1 crushed clove garlic
  • 1/2 tsp salt
  • leftover vegetables/chicken/meat - I used 1 courgette, 1 green pepper, 2 tomatoes, 6 pieces of chicken leftover from a curry and a handful of peas leftover from dinner the night before
  • 5 eggs
  • black ground pepper
  • chives
  • cheese - I used about 80g

Preparation

  1. Saute 1/2 an onion and 1 clove of garlic in a little oil with 1/2 tsp salt.

  2. Blitz 1 courgette and 1 green pepper till fine in a mini chopper. Blending finely like this means my boys will eat almost any vegetable I put into this omelette, a really healthy way to disguise veg. If your kids don't like sliced tomatoes you can also add them in now. :)

  3. Add to the sautéed onions and cook covered for 3 - 5 minutes.

  4. Slice 2 tomatoes.

  5. I used some leftover chicken from a curry, washed the masala off and shredded this by hand.

  6. Add the tomatoes, chicken, I also added a handful of peas leftover from dinner the night before and mix well. Honestly anything goes!

  7. Whisk 5 eggs with ground black pepper. I added some chopped chives, you can use any herbs you have to hand.

  8. Grate cheese or throw it into your mini chopper and blitz like me if you can't be bothered to grate, lol!

  9. Flatten all the ingredients in the pan to get an even base then pour the whisked eggs evenly on top.

  10. Finally sprinkle the cheese over the eggs. Cook for a couple of minutes on the stove and then finish off under the grill. Your Leftovers Omelette is ready when the egg is cooked through and the cheese is browned. Bon Appétit!!
