Fresh Broccoli and Spelt Salad
Ingredients
- 1 small broccoli head
- 1 red onion
- 180g or 1 cup spelt
- 100g or 3/4 cup almonds
- 265 g cooked chickpeas
- 150g vegan feta
- 120g or 1/2 cup pomegranate seeds
- 1 big handful of fresh basil
Dressing
- 60 ml olive oil
- 3 Tbsp lemon juice
- 2 tsp apple syrup
- 2 tsp Dijon mustard
- 1/2 tsp salt
- Black pepper
Preparation
Cook spelt according to the packaging instructions and let cool completely.
Toast almonds in a preheated pan without oil. Let cool completely before roughly chopping the almonds.
Cut broccoli into small florets. Peel and thinly slice the broccoli stalk. Peel and finely dice the red onion. Roughly chop the basil.
Mix all the ingredients for the dressing.
Add all ingredients to a big bowl and mix with the dressing until well combined. Add salt and pepper to taste. Enjoy!
Tips
The salad tastes even better after marinating for a couple of hours in the fridge.
