Muffins

Ingredients

  • 1 x 250g pouch of merchant gourmet simply cooked red & white quinoa
  • 110g plain flour
  • 30g cocoa powder
  • 130g granulated sugar
  • 70g soft brown sugar
  • 2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 50g milk chocolate, chopped
  • 2 large ripe bananas
  • 2 eggs

Preparation

  1. Pre heat the oven to 180°c

  2. Line a 12-muffin tray with paper cases

  3. In a food processor, mix together flour, cocoa powder, white and brown sugars, baking powder, bicarbonate of soda, and salt

  4. Stir in the quinoa and chopped chocolate
