Peanut Butter Mousse Chocolate Cheesecake

Ingredients

  • 250 g almonds
  • 125 g cashews
  • 15 g Medjool dates
  • 50 g oats
  • 30 g cocoa powder
  • 1 tablespoon coconut oil
  • 80 g peanut butter
  • 1 can coconut milk
  • Lemon juice
  • 4 tablespoons agave
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt

Preparation

  1. Blend the almonds, oats, Medjool dates, cocoa powder, and coconut oil to form a crust mixture and press it into a pan

  2. Blend the cashews, peanut butter, coconut milk, lemon juice, agave, vanilla extract, and salt to create the filling mixture

  3. Pour the filling over the crust and refrigerate until set
