Vegan Pumpkin Spice Doughnuts
Ingredients
- 1 cup flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- pinch of salt
- 1/2 teaspoon pumpkin pie spice
- 1/4 cup maple syrup
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 cup pumpkin puree
Glaze
- 1 cup powdered sugar
- 2 tablespoons milk of choice
- 1/2 teaspoon pumpkin pie spice or cinnamon
Preparation
Preheat oven to 180°C
In a large bowl, mix together the dry ingredients: flour, baking soda, baking powder, salt, and pumpkin pie spice
In another bowl, whisk together the wet ingredients: maple syrup, almond milk, vanilla extract, and pumpkin puree
Combine the wet and dry mixtures until just combined, being careful not to overmix
Spoon the batter into a greased doughnut pan or shape into doughnuts
Bake for 10-15 minutes or until golden and a toothpick comes out clean
While the doughnuts are baking, prepare the glaze by mixing powdered sugar, milk of choice, and pumpkin pie spice or cinnamon in a small bowl
Allow doughnuts to cool slightly, then dip them in the glaze to coat
