Vegan Pumpkin Spice Doughnuts

Ingredients

  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 cup maple syrup
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk of choice
  • 1/2 teaspoon pumpkin pie spice or cinnamon

Preparation

  1. Preheat oven to 180°C

  2. In a large bowl, mix together the dry ingredients: flour, baking soda, baking powder, salt, and pumpkin pie spice

  3. In another bowl, whisk together the wet ingredients: maple syrup, almond milk, vanilla extract, and pumpkin puree

  4. Combine the wet and dry mixtures until just combined, being careful not to overmix

  5. Spoon the batter into a greased doughnut pan or shape into doughnuts

  6. Bake for 10-15 minutes or until golden and a toothpick comes out clean

  7. While the doughnuts are baking, prepare the glaze by mixing powdered sugar, milk of choice, and pumpkin pie spice or cinnamon in a small bowl

  8. Allow doughnuts to cool slightly, then dip them in the glaze to coat
