Healthy Smash Bread

Ingredients

  • 1 1/2 cup @bobsredmill whole wheat flour
  • 1/2 cup @bobsredmill rolled oats
  • 1 cup carrot, grated
  • 2/3 cup zucchini, grated
  • 3/4 cup pumpkin purée
  • 1/3 cup @califiafarms unsweetened almond milk
  • 1/2 cup brown sugar
  • 1 cage free egg
  • 2 tbsp coconut oil, melted
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/4 tsp baking soda
  • pinch of salt
  • walnuts, crushed
  • chocolate chunks

Preparation

  1. Preheat oven 350F - grease loaf pan or line it with parchment paper

  2. Pulse oats in food processor (or blender if you don’t have a food processor) until broken down into a powder

  3. Mix all dry ingredients together, mix all wet ingredients together, then bring together and fold in grated zucchini and carrots! Pour batter into loaf pan and sprinkle the crushed walnuts and chocolate chunks across the top

  4. Bake for 45 minutes or until toothpick comes out clean
