Turmeric Jackfruit Coconut Curry
Ingredients
- 1 onion
- 2 cloves of garlic
- 1 tsp turmeric powder
- 1/2 tsp mustard powder
- 1/2 tsp cumin powder
- 2-3 tsp curry blend
- 1 can of coconut milk
- 1 can of jackfruit
- 1 can of chickpeas
- 1-2 cups of baby spinach
- Salt and pepper
- Brown rice to serve
Preparation
Heat some oil in a pot and cook the spices with the diced onion. Add in the garlic and cook until soft.
Add in the drained and rinsed jackfruit and chickpeas. Stir to combine. Cook for 5 minutes.
Then pour the coconut milk, combine and mash the jackfruit with the back of your spatula. Cook for 15 minutes on medium heat covered. Season with salt and pepper.
Add in the baby spinach for the last 5 minutes. Then serve alongside brown rice.
