Baked Falafel Quinoa Bowls

Ingredients

  • Baked falafels (homemade or store-bought)
  • Quinoa
  • Chopped kale
  • Tomatoes
  • Cucumbers
  • Red onion
  • Parsley
  • Olive oil
  • Lemon juice
  • Salt
  • Red wine vinegar
  • Pepper

Dressing

  • 1/4 cup tahini
  • 1/3 cup water
  • Juice of 1 lemon
  • 1 grated garlic clove
  • Salt and pepper to taste

Preparation

  1. Reheat baked falafels

  2. Cook quinoa

  3. Massage chopped kale with a drizzle of olive oil, a squeeze of lemon juice, and salt

  4. Dice tomatoes, cucumbers, red onion, and parsley and toss with olive oil and a splash of red wine vinegar

  5. Make the dressing by whisking together 1/4 cup tahini, 1/3 cup water, juice of 1 lemon, 1 grated garlic clove, and salt and pepper to taste

  6. Assemble the bowls
