Baked Falafel Quinoa Bowls
Ingredients
- Baked falafels (homemade or store-bought)
- Quinoa
- Chopped kale
- Tomatoes
- Cucumbers
- Red onion
- Parsley
- Olive oil
- Lemon juice
- Salt
- Red wine vinegar
- Pepper
Dressing
- 1/4 cup tahini
- 1/3 cup water
- Juice of 1 lemon
- 1 grated garlic clove
- Salt and pepper to taste
Preparation
Reheat baked falafels
Cook quinoa
Massage chopped kale with a drizzle of olive oil, a squeeze of lemon juice, and salt
Dice tomatoes, cucumbers, red onion, and parsley and toss with olive oil and a splash of red wine vinegar
Make the dressing by whisking together 1/4 cup tahini, 1/3 cup water, juice of 1 lemon, 1 grated garlic clove, and salt and pepper to taste
Assemble the bowls
