C H I C K E N Pot Pie

Ingredients

  • dice 1/2 an onion {or 1 small one}
  • chop 3 potatoes
  • 2 carrots & 2 stalks of celery
  • mince 2 garlic cloves
  • olive oil
  • 1 cup chicken brother
  • 1 tsp thyme
  • salt
  • pepper
  • chili flakes
  • stir
  • 2 raw chicken breasts cut in half

Preparation

  1. Dice 1/2 an onion {or 1 small one}, chop 3 potatoes, 2 carrots & 2 stalks of celery, mince 2 garlic cloves; hit sauté on your @instantpotofficial & add olive oil, once hot add veggies & cook for 4 mins; hit cancel & add 1 cup chicken brother + 1 tsp thyme, salt, pepper & chili flakes {optional}; stir & top with 2 raw chicken breasts cut in half; pressure cook for 5 mins + naturally release for 10; remove chicken & dice; stir in 1/2 cup frozen peas followed by 1/2 cup almond milk; hit sauté again and let it come to a simmer; stir in 1 tbsp arrowroot flour mixed with 1 tbsp melted ghee {or vegan butter}, simmer for 5 mins until it thickens, hit cancel & return chicken to the pot; serve with your choice of biscuits or bread
