Creamy Chickpea and Tamari Pasta
Ingredients
- 100g pasta
- 100g mushroom
- 230g chickpeas
- 1/4 tsp garlic powder
- 1 tbsp tamari
- 0.25 cup coconut yogurt (55g)
- 30g yellow onion
- 50g spinach
- Salt & pepper to taste
- 1 tbsp nutritional yeast
- 1 tbsp olive oil (or any other vegetable oil)
Preparation
Start with cooking the pasta.
While the pasta is cooking, make the chickpea and tamari sauce.
Start with cutting up the onion and mushrooms.
In a pan, fry the mushrooms and onion in olive oil until soft and golden.
Add the chickpeas, spinach, garlic powder, tamari, salt, pepper, coconut yogurt and nutritional yeast. Let it simmer on medium heat for about 3 minutes.
Serve with the pasta and top it off with some more nutritional yeast and chili flakes!
