Delicious and Nutritious Vegetarian Curry
Ingredients
- 1 x 250g pouch of Merchant Gourmet Ready Aromatic Indian-Inspired Rice & Lentils
- 2 x chopped red onions
- 1 finely chopped red chilli
- 1 tsp ginger paste
- 1 x tin of chopped tomatoes
- 1 x tin of coconut milk
- olive oil
- 1 x large sweet potato
- a small bag of spinach
- 1 tsp chilli powder
- 3 tsp ras el hanout
- 3 x cloves of garlic
- 1 x tin of chickpeas
- 1 x lime
Preparation
Heat some oil in a pan under a gentle heat and add the chilli powder and ras el hanout. Allow the spices to cook out for 5 minutes.
Add to this your onions, chilli, garlic, ginger paste, salt, pepper and cubed sweet potato. Allow this mixture to cook down for a further 5 minutes with the lid on.
Next, add the chickpeas and spinach, when the spinach has wilted down, add the tinned tomatoes, coconut milk and the juice of one lime.
Cook until the sweet potato is tender and cooked through.
Simply warm the Merchant Gourmet Indian Flavoured Grains in the microwave for a minute or in a pan with a dash of water for a nutritious lunch or with your favourite Indian accompaniments such as naan, onion bhajis and chutneys for a complete dinner.
