Nutritious Salsa Verde Pasta

Ingredients

  • 4 cups cooked pasta
  • 1 large zucchini, sliced
  • 10 shiitake mushrooms, sliced
  • Onion salt to taste
  • 1 tbsp Salsa Maggi or soy sauce/liquid aminos for flavor
  • 2 cups arugula
  • 1/2 cup crispy tofu

Sauce

  • 1/2 cup salsa verde
  • 3 garlic cloves
  • Small handful of cilantro
  • 1 lime, juiced
  • 1/2 cup cashews, soaked
  • 1 small avocado or 1/2 medium/large
  • 1/4 cup nutritional yeast
  • 1/2 cup water
  • 1 teaspoon salt

Preparation

  1. Saute sliced zucchini and mushrooms on medium-high heat until golden brown for about 6-8 minutes. Season with onion salt and salsa Maggi or soy sauce.

  2. Add all sauce ingredients to blender and blend until smooth. Taste and adjust as needed.

  3. Pour sauce over cooked pasta and incorporate well. Add veggies and arugula. Serve warm or cold.
