Pineapple and Jackfruit Fried Rice

Ingredients

  • 1 onion
  • 20g fresh ginger
  • 360g tomatoes
  • 4 garlic cloves
  • 200g pineapple chunks
  • 100g canned jackfruit
  • 500g cooked rice
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 4 tbsp sesame oil
  • Sichuan pepper (optional)
  • Chili oil (optional, to taste)

Preparation

  1. In a large wok or pan, fry the sliced onion, ginger, and optional Sichuan pepper in the oil on medium heat.

  2. When the onion is translucent, add the garlic and jackfruit.

  3. Five minutes later, add the diced tomatoes, pineapple, and rice, and stir.

  4. Finally, add the soy sauce and sugar, and fry for 5 minutes while constantly stirring.

  5. Serve and eat immediately.
