Sweet Potato & Black Bean Fajitas
Ingredients
- 3 large sweet potatoes, sliced lengthwise into 1/4
- olive oil
- chili powder
- garlic powder
- salt and pepper
- 4 bell peppers, sliced or blade a
- 1 large onion or 2 small onions, sliced or blade a
- paprika
- cumin
- oregano
- 1 (15.5oz) can black beans, rinsed and drained
- tortillas
- toppings: avocado, shredded mexican cheese
Preparation
Preheat the oven to 425 degrees
Line two large baking sheets with parchment paper
On one baking sheet, lay out the sweet potato slices, drizzle with olive oil, and season with chili powder, garlic powder, salt, and pepper
Set aside
On the other baking sheet, lay out the peppers and onions, drizzle with olive oil, and season with chili powder, paprika, cumin, oregano, garlic powder, salt and pepper
Roast both for 25-30 minutes, depending on how thick the sweet potatoes are (if you cut them more than 1/2
Meanwhile, prepare your toppings
Rinse and drain your beans
If you're using avocado, prepare it now (mash it, make it into guacamole, whatever)
Heat up your tortillas
Get out your shredded cheeses (i used a mexican blend
Once all of the vegetables are done roasting, serve everything family style or build your fajitas and serve
I topped mine with bbq sauce, but i recommend guacamole ??
