Teriyaki Rice Noodle Bowl

Ingredients

  • Rice noodles
  • Tofu
  • Assorted vegetables
  • Fresh cilantro
  • Sriracha sauce

Teriyaki sauce

  • 1 cup brown sugar
  • 1 cup mirin
  • 1/2 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon minced ginger
  • 1 teaspoon garlic powder
  • 1 tablespoon cornstarch

Preparation

  1. Soak rice noodles in hot water until tender.

  2. Bake tofu in the oven at 200°C until golden and crispy.

  3. Chop and sauté vegetables until slightly softened.

  4. Combine all teriyaki sauce ingredients in a saucepan, heat to a simmer, and let cool.

  5. Pour the sauce over the rice noodles, vegetables, and tofu, then garnish with cilantro and sriracha.
