Tomato Pasta with Slow Roasted Tomatoes

Ingredients

  • 1 small white onion
  • 3 garlic cloves
  • 1 tin of good quality chopped tomatoes or passata
  • A generous handful of fresh basil leaves
  • 1 tablespoon olive oil
  • A generous pinch of salt and pepper
  • Pasta

Slow roasted tomatoes

  • 250g cherry tomatoes
  • Olive oil (for drizzling)
  • Salt and pepper (to taste)

Preparation

  1. Slice the cherry tomatoes in half.

  2. Place them on a baking tray with the flesh facing upwards.

  3. Drizzle with olive oil and sprinkle with salt and pepper.

  4. Place the tray in the oven and slow roast at 150 degrees Celsius for 35-40 minutes, ensuring not to use a higher temperature to keep their shape.

  5. In the meantime, add oil to a large pan and heat it.

  6. Add the chopped onion and sauté for about 5 minutes until it starts to caramelize and brown slightly.

  7. Add the crushed garlic and cook for another minute.

  8. Add the chopped tomatoes and mix everything together.

  9. Turn the heat down to a simmer, cover with a lid, and let the sauce cook for 20-25 minutes.

  10. Add the chopped basil and cook for another minute.

  11. While the sauce is cooking, cook your favorite pasta according to the package instructions.

  12. Drain the pasta.

  13. Add the drained pasta to the pan with the tomato sauce.

  14. Sprinkle with fresh basil leaves and top with the slow roasted cherry tomatoes.
