Vegan Lentil Bolognese with Vegetables
Ingredients
- 2 cups green lentils
- 6oz pasta
- 2 celery stalks
- 2 carrots
- 1 zucchini
- 4 tomatoes
- 1 yellow onion
- 8-10 cups veg broth or water
- 1 can tomato sauce
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Preparation
Turn pot on medium/high heat and add veg broth. While waiting for it to boil, chop all your veggies.
When it comes to a boil, turn down to a light simmer and add lentils, onions, and tomatoes. Simmer for 12 minutes.
Add the rest of your veggies along with the pasta, tomato sauce, seasonings, and more veg broth or water as needed. Simmer for another 15-20 minutes until lentils and pasta are cooked.
