Pan-Fried Steamed Buns

Ingredients

Dough

  • 240 g all-purpose flour or plain flour
  • 3 teaspoons sugar
  • 1 teaspoon instant yeast
  • 2/3 cup warm unsweetened plant-based milk or water
  • a pinch of salt
  • 1 teaspoon oil

Filling

  • 1 lb [450g] zucchini
  • 1 small carrot
  • 1/4 cup sliced mushrooms
  • 2 stalks of scallions or green onions chopped
  • oil for cooking
  • salt

Seasoning

  • 1 tablespoon soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon white pepper
  • 1/2 teaspoon salt

Garnish

  • chopped green onions
  • black and white sesame seeds

Preparation

  1. In a bowl, mix dough ingredients and knead until smooth, then let rise in a warm place until doubled in size

  2. Grate zucchini and carrot, then combine with sliced mushrooms and chopped scallions in a bowl

  3. Mix the filling seasoning into the vegetable mixture and stir well to combine

  4. Divide the risen dough into portions, roll each into a circle, and fill with the vegetable mixture, pleating the edges to seal

  5. Heat oil in a skillet over medium heat, place buns seam-side down, and cook until the bottoms are golden brown

  6. Add a small amount of water to the skillet, cover, and steam until the buns are cooked through and the dough is tender

  7. Sprinkle with sesame seeds and chopped green onions before serving
