Traditional French Kings' Cake

Ingredients

  • 2 puff pastry sheets
  • 65g softened butter
  • 65g icing sugar
  • 65g ground almonds
  • 1 vanilla pod
  • 1 egg
  • 150g pastry cream

  • zest
  • orange blossom

Preparation

Making frangipane

  1. Cream softened butter and powdered sugar.

  2. Add egg, ground almonds, and vanilla; mix well.

  3. Add pastry cream and mix.

Assembly

  1. Roll out puff pastry and cut 6 discs from each using a mini pie mold.

  2. Use half the mold to create a lattice pattern on half of the discs.

  3. Place a full disc in the mold, add filling, moisten edges with water, and seal with a lattice-patterned disc.

  4. Transfer assembled pies to a baking sheet.

  5. Brush with egg wash.

  6. Bake at 190°C for 30-45 minutes until golden brown.

  7. Cool on a rack after removing from the oven.

Tips

  1. Hide a small charm in the filling before baking to add tradition.

  2. Serve warm and crown the finder of the charm as king or queen for the day.
