Banana Chocolate Chip Bread

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup white sugar (cane sugar)
  • 1/2 cup canola oil or softened coconut oil
  • 1 cup dairy-free milk
  • 1 tsp apple cider vinegar
  • 2 medium overripe bananas, mashed
  • 1 Tbsp vanilla
  • 1/2 tsp cinnamon
  • 1 cup chocolate chips or chunks

Toppings

  • 1/4 cup chocolate chips
  • 1 medium banana, sliced (optional)

Preparation

  1. Preheat oven to 350°F. Line a loaf pan with parchment paper or non-stick spray and set aside

  2. Combine dairy-free milk and apple cider vinegar in a bowl to make vegan buttermilk; set aside

  3. In a large bowl, mix flour, baking powder, baking soda, salt, cinnamon, and sugar

  4. To the buttermilk mixture, add canola oil, mashed bananas, and vanilla; whisk to combine

  5. Add wet ingredients to dry ingredients and mix for 1-2 minutes; do not overmix. Slowly fold 1 cup chocolate chips into the batter

  6. Pour batter into the prepared loaf pan and sprinkle 1/4 cup chocolate chips and sliced banana (optional) on top

  7. Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean

  8. Let cool completely outside the loaf pan for at least 1 hour before slicing
