Creamy Vegan Potato Bake Casserole

Ingredients

  • 1/2 onion
  • 1 clove garlic
  • 2 tablespoons vegan butter
  • 1.5 cups plant milk
  • 1 cup vegetable broth
  • 2 tablespoons flour
  • 700g potatoes
  • Salt and pepper, to taste
  • Fresh thyme, for garnish

Preparation

  1. Preheat the oven to 200°C/400°F.

  2. Wash and thinly slice the potatoes, and chop the onion and garlic.

  3. Mix the vegetable broth and plant milk together.

  4. Add one tablespoon of vegan butter to a saucepan, sauté the onion and garlic over medium heat, then add the flour.

  5. Slowly pour in the vegetable broth and plant milk mixture, stirring constantly.

  6. Simmer over low-medium heat until the sauce is creamy and thick.

  7. Grease a baking tray with one tablespoon of vegan butter, place the sliced potatoes in the tray, and pour the creamy sauce over them.

  8. Bake for 1 hour and 10 minutes until the potatoes turn golden.

  9. Let the bake cool before serving.

  10. Garnish with fresh thyme, salt, and pepper.
