Kale & Spinach Pancakes
Ingredients
- handful of kale
- handful of spinach
- 1 mug oat flour - gluten free
- 3 egg whites
- 15minmom almond milk (can add more for preferred consistency)
- pinch of Himalayan salt
- 2 tbsp maple syrup (or agave nectar)
- butter or coconut oil
Preparation
Blend everything together and straight to the pan
For sweet- top with more syrup, coconut flakes and kiwi berries or your favourite fruit
For savoury - stir fry some laminated mushrooms in a little coconut oil and crushed garlic, add mozzarella cheese with heat off just to let it melt and top pancakes. Add chilli flakes if you wish
