Kale & Spinach Pancakes

Ingredients

  • handful of kale
  • handful of spinach
  • 1 mug oat flour - gluten free
  • 3 egg whites
  • 15minmom almond milk (can add more for preferred consistency)
  • pinch of Himalayan salt
  • 2 tbsp maple syrup (or agave nectar)
  • butter or coconut oil

Preparation

  1. Blend everything together and straight to the pan

  2. For sweet- top with more syrup, coconut flakes and kiwi berries or your favourite fruit

  3. For savoury - stir fry some laminated mushrooms in a little coconut oil and crushed garlic, add mozzarella cheese with heat off just to let it melt and top pancakes. Add chilli flakes if you wish
