One Pot Rice and Beans

Ingredients

  • 2 cup brown jasmine rice
  • 1 cup tomato sauce
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 3 tbs white vinegar
  • 5 cloves garlic, minced
  • handful of cilantro
  • 2-3 tsp of hot sauce or more (optional)
  • 1 3/4 cup vegetable broth

Preparation

  1. I threw the ingredients except the cilantro into my instapot and set a manual timer for 22 minutes

  2. For stove top, sauté veggies with garlic and other spices

  3. Place remaining ingredients except cilantro and bring to a boil

  4. Cover and set to simmer for about 30 to 35 minutes

  5. Stir in cilantro
