Rocky Road Squares

Ingredients

  • 300g chocolate
  • 100g butter/margarine
  • 3 tbsp golden syrup
  • 160g plain digestives or rich tea biscuits
  • 100g marshmallow
  • 30g cereal (I used rice krispies, any other cereal or popcorn work too)_
  • optional - pistachios (or a nut of your choice) + dried fruits to decorate

Preparation

  1. Line a square 8 × 8 inch baking tin with greaseproof paper

  2. Melt the chocolate, butter + golden syrup in a heatproof glass bowl over a pan of boiling water until smooth and silky

  3. Crush the digestive biscuits in a food bag with a rolling pin, leave the biscuit pieces chunky as they add texture

  4. Chop a handful of pistachios or a nut of your choice finely, leave to one side till needed

  5. Chop your dried fruits if they're big, i used freeze dried raspberries from @sainsburys which were perfect and small

  6. In a large mixing bowl add the melted chocolate mixture, crushed biscuits, marshmallows, cereal and mix well to combine

  7. Pour into the lined baking tin and level out

  8. Sprinkle the chopped nuts and dried fruits over the top and refrigerate for a couple of hours

  9. Cut into squares once firm and enjoy!
