Thick Herbaceous Tomato Soup for Cozy Nights
Ingredients
- 4 tbs of olive oil
- 8 cloves of minced garlic
- 4 cups of chopped vine ripe tomatoes
- 2 tsps of dried basil
- 2 sprigs of thyme
- 3/4 tsp of pink himalayan salt
- 1/2 tsp of black pepper
- 1/2 tsp of dried oregano
Preparation
In a large pot on medium heat add olive oil, garlic, and herbs, cook for about 1 minute.
Next add tomatoes and seasoning and stir well.
Lower heat to medium-low and allow to simmer for 30 minutes stirring occasionally.
Once time is up remove from heat, garnish with fresh thyme and enjoy. Optionally, serve in a bread bowl.
