Vegan Lettuce Wraps with Raw Hummus
Ingredients
- Butter lettuce cups
- 1 avocado, chopped
- 1 tomato, chopped
- Sprouts (of choice - always make sure organic!)
Hummus mix
- 2 zucchinis, chopped
- 3/4 cup tahini
- 2 tbsp nutritional yeast
- 1/2 cup lemon juice
- 2-3 garlic cloves
- Sea salt to taste
- Optional: cayenne pepper
Preparation
Blend the hummus ingredients until smooth: chop 2 zucchinis and mix with 3/4 cup tahini, 2 tbsp nutritional yeast, 1/2 cup lemon juice, 2-3 garlic cloves, sea salt to taste, and optional cayenne pepper.
Assemble the lettuce wraps by placing chopped avocado, chopped tomato, sprouts, and the prepared raw hummus into butter lettuce cups.
Wrap and enjoy, ensuring sprouts are organic for best results.
