Vegan Mac and Cheese

Ingredients

  • 1 box Whole Wheat or Gluten-free Pasta use any pasta of choice
  • 2 Large Yukon Gold Potatoes
  • 3 Medium Carrots
  • 2 Cups Broccoli Florets
  • 2 Cloves Minced Garlic
  • 1/4 Cup Nutritional Yeast
  • 1 Tsp Apple Cider Vinegar
  • 2 Tbsp Freshly-Squeezed Lemon Juice
  • 1 Tsp Dijon Mustard
  • 1/2 Tsp Paprika
  • 1/8 Tsp Turmeric Powder
  • 1/2 Tsp Kosher Salt
  • 1/4 Tsp Ground Pepper

Preparation

  1. Cook the pasta according to package directions until al dente

  2. While pasta is cooking, peel and chop the potatoes and carrots, then boil them in water until soft

  3. Steam or boil the broccoli florets until tender

  4. In a blender, combine the cooked potatoes, carrots, broccoli, minced garlic, nutritional yeast, apple cider vinegar, lemon juice, Dijon mustard, paprika, turmeric, salt, and pepper, then blend until smooth to make the sauce

  5. Drain the pasta and mix it thoroughly with the prepared sauce before serving
