Easy Vegan Butter Chicken
Ingredients
- 400 g tofu
- 2 tbsp olive oil
- 1 tbsp cornstarch
- 1 red onion
- 1 tbsp fresh ginger
- 3 cloves of garlic
- 1 red bell pepper
- 1 tsp curry powder
- 1 tbsp garam masala
- 1 tsp turmeric
- 1 tsp smoked paprika
- 2 tbsp tomato paste
- 1 can coconut milk
Preparation
Coat the tofu with cornstarch and fry in olive oil until golden brown.
In the same pan, sauté chopped red onion, fresh ginger, and garlic until fragrant and softened.
Add curry powder, garam masala, turmeric, smoked paprika, and tomato paste; stir and cook for one minute to release flavors.
Pour in coconut milk and simmer the mixture for 10-15 minutes until the sauce thickens slightly.
Stir in chopped red bell pepper and the fried tofu; cook for an additional 5 minutes until heated through and serve.
