Quick and Easy Vegetable Curry

Ingredients

  • 1 fennel bulb
  • 2 parsnips
  • 1 sweet potato
  • a bit of kale
  • 1 onion
  • 300g cooked chickpeas
  • 500ml vegetable broth
  • 1/2 teaspoon fenugreek
  • 2 teaspoons cumin
  • 2 teaspoons curry powder
  • 1/2 teaspoon red chili
  • 1/2 teaspoon cardamom
  • 1 star anise
  • 300g tomato sauce
  • 200g coconut milk

Preparation

  1. In a pan over medium heat, pour a little oil and add the diced onion with all the spices. Cook for 5 to 7 minutes.

  2. Then add all the other diced vegetables except the leafy greens like kale. Pour in the vegetable broth and tomato sauce, cover, and cook for 10 to 15 minutes.

  3. Finally, pour in the coconut milk and leafy greens, and let cook uncovered for a few more minutes until everything is cooked.

Tips

  1. You can substitute most vegetables and legumes with others.
