Raw Cauliflower Hummus No Bean Version
Ingredients
- 1 head organic cauliflower
- 1/2 cup onion (sweet onion or yellow onion)
- 1/3 cup cashews
- 1/4 cup organic sesame tahini
- 3 tbsp freshly squeezed lemon juice
- 1 clove garlic
- 2 tsp ground cumin
Optional add-ins
- 1/4 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp cayenne pepper
Preparation
Soak cashews for at least 1 hour and drain.
Cut cauliflower into florets (should yield about 2 cups).
Chop onion.
Mince garlic.
Add all ingredients to a food processor.
Process until smooth, stopping several times to scrape down the sides of the bowl with a rubber spatula.
If using a Vitamix, it may create a creamier texture; add water to adjust consistency if necessary, but avoid making it too runny.
Store in an airtight container in the refrigerator to chill.
Enjoy with fresh vegetables.
