Raw Cauliflower Hummus No Bean Version

Ingredients

  • 1 head organic cauliflower
  • 1/2 cup onion (sweet onion or yellow onion)
  • 1/3 cup cashews
  • 1/4 cup organic sesame tahini
  • 3 tbsp freshly squeezed lemon juice
  • 1 clove garlic
  • 2 tsp ground cumin

Optional add-ins

  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp cayenne pepper

Preparation

  1. Soak cashews for at least 1 hour and drain.

  2. Cut cauliflower into florets (should yield about 2 cups).

  3. Chop onion.

  4. Mince garlic.

  5. Add all ingredients to a food processor.

  6. Process until smooth, stopping several times to scrape down the sides of the bowl with a rubber spatula.

  7. If using a Vitamix, it may create a creamier texture; add water to adjust consistency if necessary, but avoid making it too runny.

  8. Store in an airtight container in the refrigerator to chill.

  9. Enjoy with fresh vegetables.
